A'la Tuna sushi bowl

We all know sushi, but it's an art that few of us have mastered 😂 Coming to the rescue is the sushi bowl - all the ingredients (and even more) that you'd find in a roll, just put into one bowl! Spicy tuna roll is popular in Europe, but why use tuna when you can enjoy delicious and healthy Jackfruit?

Ingredients:

  • 2 cans of A'la Tuna Chilli&Citrus

  • 100 g sushi rice

  • 1 avocado, sliced

  • 2 tablespoons sriracha sauce

  • 4 tablespoons vegan mayonnaise

  • 100 g edamame, steamed

  • 1 cucumber, julienned

  • 1 carrot, julienned

  • 1/4 red cabbage, thinly sliced

  • A few radishes, thinly sliced

  • 1 lime, cut into wedges

  • Pickled ginger (optional)

  • Spring onion (optional)

How to prepare

Instructions:

  1. Prepare the sushi rice according to the package instructions. Allow it to cool slightly.

  2. While the rice is cooling, open the cans of A'la Tuna Chilli&Citrus, drain and rinse the jackfruit thoroughly.

  3. In a bowl, mix the sriracha sauce and vegan mayonnaise to create the spicy mayo sauce. Adjust the sriracha amount according to your preferred level of spiciness.

  4. Heat a pan over medium heat and add the jackfruit. Sauté for a few minutes until the jackfruit begins to brown and caramelize slightly.

  5. Remove the pan from heat and gently shred the jackfruit with a fork, creating a texture resembling pulled meat.

  6. Assemble the sushi bowl: Divide the sushi rice into four bowls. Arrange the avocado slices, jackfruit, edamame, cucumber, carrot, red cabbage, and radishes on top of the rice.

  7. Drizzle the spicy mayo sauce over the ingredients in each bowl.

  8. If using, add pickled ginger and chopped spring onion for extra flavor.

  9. Serve the sushi bowls with lime wedges on the side for squeezing over the bowl before eating.
