RAW Fisherman Salad

Sometimes the simplest food is the most delicious - and this dish is proof of that! Everyone at the table was amazed by it, and the idea came spontaneously - I found a yellow zucchini at the market stall and had to use it! Yes, you can eat zucchini raw, and you should! It's wonderfully crunchy, sweet, and contains more vitamins than after cooking. With seasonal tomatoes, Fisherman, we have a HEALTH bomb :D

Ingredients

Ingredients for 2 servings:

  • Fisherman A'la Tuna Chilli&Citrus: 1 can
  • Yellow zucchini: 2 pieces
  • Basil vegan pesto: 2 tablespoons
  • Cherry tomatoes: about 10 pieces
  • Cashews: 2 tablespoons
  • Lemon: 2 wedges
  • Fresh basil and mint: a few leaves each

How to prepare

  1. Wash the zucchinis. Use a potato peeler to "peel" the zucchinis all around, creating ribbons. Peel until you reach the seeds. You can either eat or slice the flesh from the inside, it's delicious!
  2. Divide the zucchini ribbons into two bowls. Add pesto to each and gently toss, being careful not to break the ribbons - they're delicate!
  3. On top, place the halved cherry tomatoes. Add the Fisherman chili&citrus, sprinkle with cashews, and you're done!
  4. Serve with lemon wedges and fresh basil and mint leaves :)
