Fisherman Toast with Chanterelles

August welcomes chanterelles! A'la Tuna in oil is a super nutritious addition to toast with sautéed mushrooms - apart from its delicate, fish-like flavor, it enriches the meal with protein, healthy fats, and vitamins. This recipe is seriously rich, but if you want a lighter version, simply reduce the amount of butter and oil used while cooking :) The photos were taken in our new, beautiful culinary studio, where we're currently creating new and delicious videos for you!

Crunchy bread, A'la Tuna, sautéed chanterelles, basil oil, browned butter, and pickled onion!

Ingredients

Ingredients for 2 servings:

  • A'la Tuna in Oil: 1 can
  • Slices of rustic bread: 2 pieces
  • Chanterelles: a handful
  • Butter; dairy or plant-based: 1 tablespoon + 3 more for browned butter
  • White onion: 1 small
  • Basil: a handful
  • Garlic: 1/2 clove
  • Olive oil: 4 tablespoons
  • Salt and pepper: to taste

How to prepare

  1. Prepare all the ingredients and a medium-sized skillet.
  2. Dice the white onion. Wash the chanterelles - I clean them in water with a bit of flour :)
  3. Pour a small amount of oil onto the skillet, heat it, and then sauté the onion. Add the chanterelles and butter to the onion.
  4. Season with a small amount of salt and pepper. Sauté until the chanterelles are golden.
  5. Meanwhile, slice the bread; you'll need two thick slices, enough to satisfy your appetite :D
  6. Dice the basil and garlic into small pieces. Mix them with olive oil and set aside.
  7. Browned butter - this addition gives an incredible, nutty aroma to our sandwich! Heat the remaining butter in a small saucepan. Cook while stirring until the foam subsides and the butter starts to smell aromatic. It should be golden in color; don't let it burn :)
  8. Toast the bread slices on the skillet you used for the chanterelles, cooking both sides. Now it's time to assemble our toast :>
  9. Spread A'la Tuna and the sautéed chanterelles on the toast. Drizzle with basil-infused olive oil and browned butter. Finish with pickled or raw red onion. Enjoy!
