Cheesy Spaghetti with Jackfruit

Another collab, with an amazing, plant-based cheese company! SERio creates 'cheeses' from lupin - and speaking of lupin? It's a little bean, popular in Portugal, that has killer nutritional values! (and we love that in FJ). Low in fat, high in protein, and with an awesome, cheesy taste. This pasta didn't survive until the photos, because I ate half of the bowl :( But I assembled a new one and took these photos so you have something to look at :D Delicate, creamy, and citrusy sauce, Jackfruit resembling chicken, and red pepper - I'm all in.

Number of servings: 4

Ingredients

For 4 servings:

  • Soaked cashews: 75g
  • SERio with tomatoes and basil: 35g
  • Vegetable broth + salt if needed: 300-350ml
  • Garlic: 1/2 clove
  • Pepper: 1 small teaspoon
  • Lemon zest: 2 strips, about 2 cm.

JACKFRUIT:

  • Jack Naked Pulled: 1 package
  • Spring onion; onion: 1 piece
  • Chanterelles; shredded: about 30g
  • Garlic: 1 clove
  • Vegetable oil: 1 tablespoon
  • Vegetable broth: 100-150ml

Additions for 4 servings:

  • SERio Parmeggio: 8 slices
  • Red pepper: 1 tablespoon
  • Spaghetti pasta: 400g
  • Fresh basil: a few leaves
  • Lemon: 2 slices

How to prepare

  1. In a powerful blender, combine all the sauce ingredients. Blend on high speed until you achieve a smooth sauce. You can also try doing this with a handheld blender - it's important to ensure that the cashews are thoroughly ground :D
  2. Meanwhile, heat the oil in a pan. Rinse the jackfruit under running water and drain. Sauté the onion and garlic in the pan. Add the chanterelles and jackfruit, season with spices. Cook until everything is golden, about 10 minutes. After this time, add vegetable broth and cook until the liquid evaporates.
  3. Pour the sauce into the pan and simmer over low heat until the sauce thickens - about 3 minutes.
  4. Boil a pot of water, add salt, and cook the spaghetti until Al Dente.
  5. Combine the pasta with the sauce and transfer to bowls. Add slices of SERio Parmeggio. Garnish with red pepper, basil, and lemon slices. Enjoy your meal!
