From Jackfruit, you can make many things, the ideas are endless - so today I come to you with a very simple recipe for Jackfruit Kebab! Marinated in Turkish flavors, chopped "like meat" - you can really be mistaken :o

Ingredients

Ingredients for Kebab:
Pulled Jack Naked 300g
yogurt 2 tablespoons
"Kebab shoarma" seasoning 3 teaspoons
soy sauce 1 tablespoon
tomato paste 1 tablespoon
red onion 1 small onion
garlic; cloves 1 clove
salt 1/3 teaspoon
pepper 1/4 teaspoon
olive oil 1/2 cup, 250ml
Extras:
yogurt (plant-based or greek) 60g
plant-based mayo 60g
sriracha sauce 10g
garlic, cloves 2g
wheat tortilla or pita bread 4 pieces
arugula 50g
tomato 1 piece
red onion 1/3 piece
fresh cucumber 1/3 piece
reb bell pepper 1/4 piece

How to prepare

  1. Start with the marinade. Grind or finely chop the onion and garlic. Combine all the ingredients in a large bowl. Set aside 1/5 of the marinade for later.
  2. Thoroughly wash the jackfruit under running water to remove the brine flavor. Pat dry and mix with the marinade. Cover and refrigerate for 3 hours or overnight and an hour in the freezer. Freezing will slightly change the texture, making it easier to shred the jackfruit. It will then resemble shredded "chicken" ;)
  3. Meanwhile, prepare the sauce and the remaining ingredients.
  4. When the jackfruit is ready, chop it into smaller pieces lengthwise. In a pan over medium heat, sauté the jackfruit. Pour in the remaining marinade and a splash of water if needed. Cook until the jackfruit becomes darker, slightly charred and "meaty".
  5. Warm up the pita and fill it with sauce, then the rest of the ingredients. Ready to serve!
