Pasta with Jackfruit and SERio!

Another collab, with another amazing plant-based company! SERio creates 'cheeses' from lupin - and what is lupin? It's a legume, popular in Portugal, that has killer nutritional values! (and that's what we love at FJ). Low fat content, protein, and a kickass cheesy taste.

This pasta didn't survive until the photos, because I ate half of the bowl :( But I made a new one and took these pictures so you could have something to look at :D

Delicate, creamy, and citrusy sauce, Jackfruit looking like chicken, and red pepper - I'm all in.

Ingredients

Ingredients for the sauce:
soaked cashews 75g
SERio with tomatoes and basil 35g
vegetable broth + salt if needed 300-350ml
garlic 1/2 clove
pepper 1 small teaspoon
lemon zest 2 strips, about 2 cm
JACKFRUIT:
Pulled Jack Naked 1 package
spring onion 1 piece
oyster mushrooms; shredded  about 30g
garlic 1 clove
plant-based oil 1 tablespoon
vegetable broth 100-150ml

 

Toppings for 4 servings:
SERio Parmeggio  8 slices 
red pepper 1 tablespoon
spaghetti pasta 400g
fresh basil several leaves
lemon 2 slices

How to prepare

  1. To make the sauce, place all the ingredients in a powerful blender. Blend on high speed until you get a smooth sauce. You can also try making it with a hand blender - it's important to ensure that the cashews are finely ground :D
  2. Meanwhile, heat oil in a skillet. Rinse the jackfruit under running water and drain. Sauté the onion and garlic in the skillet. Add the oyster mushrooms and jackfruit, season to taste. Sauté until golden brown, about 10 minutes. Then, add the vegetable broth and cook until the liquid evaporates.
  3. Pour the sauce into the skillet and cook over low heat until it thickens, about 3 minutes.
  4. ZHeat a pot of water, add salt, and cook the spaghetti until Al Dente.
  5. Mix the pasta with the sauce and transfer to bowls. Add slices of Parmeggio. Garnish with red pepper, basil, and lemon slices. Enjoy!
