Super tasty jackfruit served with spicy and nutty coconut sauce with peanut butter. Ready in 15 minutes!

Ingredients

 
Ingredients for the noodles:
Pulled Jack Naked 250g
oil 1 tablespoon (15 ml)
shallot; chopped 1 piece
garlic clove; chopped 2 pieces
cabbage, chopped 1/4 cup
red pepper; chopped 1/4 cup

instant noodles (or soba, rice noodles)

Ingredients for the sauce:
coconut milk, full-fat 1/2 cup (118 ml)
peanut butter (smooth or crunchy) 1/3 cup (85g)
soy sauce 2 tablespoons (30 ml)
lime juice 2 tablespoons (30 ml)
maple syrup 1 tablespoon (15 ml)
sriracha sauce 1 i 1/2 teaspoons (7ml)
sesame oil 1/2 teaspoon (3 ml)

How to prepare

  1. Heat oil in a large non-stick skillet over medium heat. Once heated, add shallot, garlic, cabbage, and red bell pepper, and cook for 5-7 minutes, stirring regularly.
  2. Meanwhile, open the package of Shredded Jackfruit and transfer it to the skillet. Cook for an additional 3-5 minutes.
  3. While the jackfruit and vegetables are cooking, prepare the peanut sauce. In a large bowl, combine coconut milk, peanut butter, soy sauce, maple syrup, sriracha, lime juice, and sesame oil. Whisk until smooth and well combined. Taste and adjust seasonings according to your preference. Add more sriracha for spiciness, maple syrup for sweetness, or soy sauce for saltiness.
  4. Bring a large pot of water to a boil. Once boiling, add the noodles and cook according to the package instructions. Once cooked, drain and cover to keep warm.
  5. Pour the peanut sauce over the skillet mixture and stir to coat the jackfruit with the peanut sauce. Cook for a few minutes before removing from the heat.
  6. To serve, divide the noodles into bowls and top with the tangy jackfruit mixture. Garnish with fresh cilantro or basil, mint, and lime juice. Quickly toss before eating to coat the noodles with the peanut sauce!
  7. This dish is best served the same day but can be stored in the refrigerator for up to 2 days. Simply reheat gently in a saucepan and add a few tablespoons of coconut milk if needed.
