Ah, Spring! Seeing seasonal vegetables at the market surely makes everyone's mouth water :> I've made such a spring combo that it's irresistible. Asparagus? Check. Edible flowers? Check. Jasmine? Present! Sage? Also there! A'la Tuna in oil from the Fisherman series perfectly complements the sauce based on CUDO kombucha and asparagus, I was amazed myself. Everyone in the office was indulging without restraint!

Ingredients

Ingredients for the sauce:
garlic; clove 1 piece
plant-based butter 4 tablespoons
ginger; grated 2cm
12% cream 200ml
Jasmine Kombucha CUDO 200ml
salt and pepper to taste
sage leaves 2-3 pieces
orange zest 1/4 piece
curcuma 1 teaspoon
nutritional yeast flakes or vegan parmesan  1 tablespoon
   
Ingredients for 4 servings:
A’la Tuna in Oil  1 can
sauce (recipe above) the whole recipe
asparagus 1 packet, about 12 pieces
seasonal greens 1 handful
oranges 1 piece
sage; leaves 1 pot
olive oil 100ml
garlic; clove 1 piece
rustic bread 1 loaf
Jasmine Kombucha CUDO 200ml

How to prepare

  1. Prepare the sauce. Finely chop the garlic and peeled ginger. Sauté them until golden brown in butter. Then pour in the cream, kombucha, spices, and sage leaves. Cook over medium heat for 15 minutes until the excess water evaporates, and the sauce thickens. Finally, add the lemon zest and blend until smooth. Set aside.
  2. Bring water to a boil in a pot and season with salt. Trim the woody ends of the asparagus and add them to the pot. Cook for 3-4 minutes, then transfer to cold water to stop cooking.
  3. Now it's time for the sage sauce - pour olive oil and kombucha into a blender, add sage leaves and a clove of garlic. Blend on high speed until you get a smooth sauce. If it's too thick, add more kombucha.
  4. Prepare the A'la Tuna can - do not drain the oil - it's very healthy!
  5. On a plate, spread the sauce and arrange the asparagus. Place the A'la Tuna on top of the asparagus. Garnish with leaves and sliced oranges. Add slices of bread and drizzle the whole thing with sage sauce.
    *The sauce is so delicious that you might need more bread to soak it all up!
    *If you prefer a low-carb diet, skip the bread or use whole-grain crackers :)
